Late night baking for a play school bake sale. No sugar, no time, no ideas! Until I remembered the rhubarb a friend gave me recently. Chopped up and stewed with a windfall apple, I substituted icing sugar for caster and prayed. Then I baked them with a blob of fruit compote inside and prayed.
The result? Tasted lovely but looked sunken. So I filled the hole with cream cheese and compote and used gold sprinkles to add bling.
Humph. Next time they’ll be better 😉
Update: I went and bought them all because they looked so sad sitting there by themselves. I’m eating them now. They’re gorgeous!
